Cacao Gets Made in the Shade. Here's Why that Matters
Agroforestry Theobroma cacao is cacao grown beneath a diverse canopy of trees rather than in monoculture plantations. These systems mimic natural forests, support biodiversity, improve soil health, and create more resilient farming ecosystems.
Most of the world's cacao is not grown this way. The majority comes from full-sun monoculture farms where the trees stand in open rows on cleared land. Agroforestry takes a different approach, one that is closer to how cacao grows in the wild.

What an agroforestry cacao farm looks like
Walk onto an agroforestry cacao farm and you'll notice the shade first. The canopy above the cacao blocks direct sunlight, keeps the air cooler, and holds moisture in the soil longer than open-field systems.
The farm is structured in layers. At Kampura, in the lowlands of Izabal, Guatemala, the upper canopy includes genuine mahogany, Honduran rosewood, and madre de cacao. These are large timber and leguminous trees that provide filtered light to everything growing below them. The first two on the list are also threatened tree species. Sustainable timber production can reduce demand in illicit trading.
Cacao occupies the mid-story. The trees reach roughly 4 to 8 meters tall and produce pods along their trunks and lower branches, shaded by the canopy overhead.
Below the cacao, the understory is managed with nitrogen-fixing ground cover plants like falso maní (Arachis pintoi) when soil conditions call for it. These plants pull nitrogen from the atmosphere and make it available in the soil, reducing or eliminating the need for synthetic fertilizer.
The result is a vertical farming system where each layer serves a function. The upper canopy provides shade, wind protection, and long-term timber value. The cacao produces the primary crop (and delicious chocolate). The understory maintains soil fertility. Nothing in the system exists by accident.

How this compares to monoculture cacao
Most cacao worldwide is grown in monoculture: single-crop fields of cacao trees in full sun, often on land cleared from tropical forest.
Monoculture cacao tends to produce higher yields per hectare in the first decade or so. But those yields come with costs. Full-sun cacao requires more chemical fertilizer because there is no canopy dropping leaf litter to feed the soil. It requires more pesticide because monoculture attracts concentrated pest pressure without the natural predator habitat that a diverse system provides. And it degrades soil faster.

Agroforestry cacao produces less volume per hectare. But production remains stable over decades because the soil is being built rather than mined. Input costs are lower. Disease pressure is more manageable. And the land appreciates in value rather than degrading toward abandonment.
Why cacao grows well in forest systems
Cacao is an understory species. It evolved in the lower canopy of tropical forests in the upper Amazon basin, growing in filtered light beneath taller trees. Full-sun cultivation is a modern agricultural adaptation designed to maximize short-term yield, not a reflection of the plant's biology.
When cacao grows in shade, it matures more slowly. The trees face less heat stress. Soil moisture stays more consistent. And the surrounding biodiversity creates a more stable microclimate for the cacao to grow in over years and decades.
This is why agroforestry is growing cacao the way cacao already wants to grow.
What happens to the soil
Soil is where the long-term case for agroforestry becomes clearest.
In monoculture systems, topsoil erodes between exposed rows. Organic matter declines year over year. Farmers compensate with fertilizer, but fertilizer does not rebuild soil structure. Over time, the land produces less, costs more to maintain, and eventually stops being viable.
In an agroforestry system, the canopy drops leaves continuously. That leaf litter decomposes into organic matter that feeds the soil. Root networks from multiple tree species hold the soil in place and create channels for water infiltration. Nitrogen-fixing plants in the understory add fertility without chemical inputs.
Regenerative agriculture is a farming approach that restores degraded land by rebuilding soil organic matter, increasing biodiversity, and sequestering carbon. In cacao, this often means converting cleared pasture into diverse agroforestry systems that produce food while restoring ecosystem function.

Kampura's land in Izabal was cattle pasture before it became a cacao farm. The conversion from open grassland to a layered agroforestry system has rebuilt soil that decades of grazing had compacted and stripped of organic matter. The farm is a working example of what regeneration from pasture to productive forest looks like over time.
How agroforestry affects cacao flavor
Shade-grown cacao develops more slowly on the tree, and there is evidence that this extended maturation period influences the chemical precursors available during fermentation. Bean-to-bar chocolate makers have observed that shade-grown cacao lots often produce more complex flavor profiles than comparable full-sun lots.
The relationship between growing conditions and final flavor is still being studied. Variables like genetics, soil composition, altitude, fermentation technique, and roasting all contribute to what ends up in the cup. But among specialty cacao buyers, shade-grown and agroforestry-origin beans are increasingly sought after for the flavor complexity they carry.
This is not a guaranteed outcome. Agroforestry does not automatically produce great-tasting cacao. Fermentation and post-harvest handling still determine much of the final quality. But the growing environment sets a ceiling on what's possible, and diverse forest systems tend to set that ceiling higher.
How Kampura grows cacao
Kampura is an organic cacao operation in Izabal, Guatemala that has regenerated former cattle pasture into a productive agroforestry system. Ceremonial cacao is a drink made from pure cacao paste that has been fermented, dried, lightly roasted, and stone-ground. Unlike cocoa powder, it contains the full natural cocoa butter of the bean and is typically melted into hot water or milk to create a rich cacao beverage.

FAQ
Is agroforestry cacao organic?
Often, but not always. Agroforestry describes a farming structure, not a certification. Many agroforestry farms use no synthetic chemicals because the system itself reduces the need for them, but organic certification requires a formal audit process. Kampura is USDA, EU, and JAS Organic certified.
Does shade-grown cacao taste different?
It can. Shade-grown cacao often develops more slowly, which may influence fermentation precursors and flavor complexity. But genetics, fermentation, and processing all play equally large roles. Growing conditions set the foundation; what happens after harvest determines the result.
Is agroforestry the same as regenerative agriculture?
They overlap but are not identical. Regenerative agriculture is a broader approach to farming that focuses on rebuilding soil health, increasing biodiversity, and sequestering carbon. Agroforestry is one practice within that framework. A cacao farm can be agroforestry without meeting every definition of regenerative, and regenerative farms can exist without a multi-layer tree canopy. In practice, agroforestry cacao systems tend to be regenerative because the structure itself rebuilds soil and ecosystem function.
Why don't more cacao farms use agroforestry?
Economics and time horizon. Monoculture cacao produces more volume per hectare in the short term, which matters when farmers are paid by weight. Agroforestry requires more land management knowledge, more diverse planting, and a longer wait for the full system to mature. The payoff comes over decades: lower input costs, stable yields, appreciating land, and additional income from timber and other canopy crops. But that long-term return requires patience and capital that many smallholder farmers do not have access to.
